Chili Master Adds Flavor to VI Cuisine Scene
Just outside of a neighborhood convenience store on the north side of St. Thomas, United States Virgin Islands, sits a Cajun kitchen. This kitchen is inhabited by pots of all sizes, and inside of each bubbles an inviting, savory temptation. The flavors reflect the cultural mélange of the kitchen's proprietor (call him "Karl", since that's his name) and harken back to his childhood in Opelousas, Louisiana.
Karl's Kitchen has provided the award-winning chili recipe that has twice resulted in the U.S. Virgin Islands being represented (via the annual local Texas Society Chili Cook-off) in Terlingua, Texas, home of the International Chili Society Chili Cook-off. Visitors to Karl's Cajun Kitchen will find authentic hot tamales (from a 100-year old recipe given to him by his grandmother), sweetly smoked BBQ ribs, tender beef brisket, crispy fried catfish, crawfish chimichangas, dirty rice, and Karl's signature slaw. Catfish and brisket Po' Boy sandwiches are also available.
Karl's is only open on Saturdays and Sundays, so you might want to pick up an extra dish or two to tide you over until the next time "the good times roll" at Karl's kitchen.
